Here is a good recipe that I've been recommending to friends:





1 cup rice (I use a wild rice mix)


1 cup chicken broth


1/2 cup diced onion


2 tsp minced garlic


2 Tbsp chopped Kalamata olives, pitted


1 can (15.5 oz) stewed tomatoes, cut into small pieces


1 tsp cumin


1.5 tsp parsley flakes


1 tsp dried rosemary


salt and pepper


2 boneless chicken breasts (6 oz each)





Preheat oven to 375. Put rice, broth, onions, garlic, olives, spices and stewed tomatoes in a 9X9 or 10X7 glass baking dish. Mix together. Cover with tin foil and bake for 20 minutes.





Remove dish from the oven, take off the tin foil, and place the chicken breasts on top of the rice mixture. Season with salt and pepper. You may also sprinkle some rosemary and cumin on top of the chicken, if you wish.





Return uncovered dish to the oven, reduce heat to 350 and bake another 30 minutes.
Super easy- saute chicken, then add a cup of water/chicken broth/beef broth/veg broth along with tomatoes and rice along with a package of taco seasoning. If you don鈥檛 have taco seasoning- use chili powder and a little paprika. To this you could also add onions, corn, olives, chopped green chili peppers, and top with cheddar or Mexican cheese. Second option- instead of taco seasoning/chili powder- add 1/2TB to 1TB Cajun seasoning. To this you could also add bell peppers, carrots, onions, garlic, zuchinni, squash, cauliflower, okra. CHICKEN WITH FRESH TOMATOES AND RICE





1 (2 1/2 - 3 lb.) chicken, cut up


2 tbsp. butter or oil


1 lg. onion, peeled and chopped


1 green pepper, chopped


2 lg. tomatoes, chopped (approx. 2 c.) or 1 1/2 c. canned tomatoes


2 c. water


1 c. uncooked reg. rice


Salt and pepper





Brown chicken in butter or oil in skillet for about 5 minutes. Add onion and green pepper; saute until soft but not brown, 4-5 minutes. Add tomatoes and water. If using the liquid from canned tomatoes, cut down amount of water. Cover and simmer for about 30 minutes.





Add 1 cup rice, salt to taste (about 1 teaspoon) and pepper. Cover and cook for 20-30 minutes until rice is tender and liquid is absorbed. Makes 4-6 servings.

RISOTTA (Chicken and Rice With Tomato


Sauce)





1 whole chicken breast (or other parts of chicken)





Remove from bone and cut in pieces.





2 tbsp. butter


1/2 c. onion, chopped


1/4 c. parsley, chopped


1 clove garlic, chopped


2 tsp. basil


1/2 tsp. rosemary, crumbled


Salt and pepper


2 c. tomato sauce


1 1/2 c. uncooked rice


3 c. chicken broth





Heat butter in large heavy skillet or Dutch oven. Add chicken, brown well. Add onions, garlic, parsley and saute about 5 minutes. Add tomato sauce, basil, rosemary, salt and pepper and chicken broth. Bring to a boil. Reduce heat, simmer covered until chicken is tender, about 20-30 minutes.





Stir rice into sauce mixture. Simmer covered about 35 minutes. Stir occasionally to keep rice from sticking. Rice should be tender and liquid absorbed. Sprinkle with grated cheese.

BAKED CHICKEN WITH TOMATO RICE


STUFFING





2 lb. boneless, skinned chicken (browned in Pam sprayed pan)





Combine in bowl while chicken browns:





1/3 c. chopped celery


1/3 c. chopped onion


1 c. cooked tomatoes


1/2 c. water


3/4 tsp. salt


Dash pepper


1/4 tsp. powdered sage


1/4 c. chopped green pepper


2/3 c. uncooked rice





Turn mixture into 12 x 7 x 2 inch baking dish. Arrange chicken on top of rice mixture. Sprinkle with additional salt and pepper and paprika. Cover and bake 1 hour or until chicken is tender.

CHICKEN RICE TOMATO SOUP





1 lg. onion, chopped


2 cloves garlic, minced


3 tbsp. fresh Italian parsley, chopped


2 c. whole Italian canned tomatoes (with juice)


1/2 c. uncooked long grain rice


4 c. chicken broth


1/4 tsp. marjoram


Salt and pepper


1 pkg. chicken flavored instant broth





Saute onion, garlic and parsley in 4 tablespoons oil. Add tomatoes and cook 15-20 minutes. Add rice, broth and herbs. Bring to a boil and simmer until rice is tender, 25-30 minutes. Serve.

STEWED RICE, TOMATOES WITH CHICKEN





1 can stewed tomatoes


4 chicken breasts


2 c. rice





Brown chicken both sides. Add stewed tomatoes. Cover on low for 45 minutes or tender. Serve over rice.

Cook the rice and drain.


Cook the chicken and shred.


Cook the tomatoes and add some seasonings, S%26amp;P, and perhaps some Cayenne.


Mix the two together, thicken a little if required, check taste, and serve of fluffy rice
cut chicken into bit size pieces and cook in a pan with the tomatoes....then serve on top of the rice





make it so the tomates and chicken have enough juices to soak into the rice...i've made this before but i used sauceage instead of chicken
