Does anyone have recipes for left over baked potatoes?

I have 4 large leftover baked (cooked) potatoes. Does anyone have any recipes for potato soup? potato pancakes? anything else?Does anyone have recipes for left over baked potatoes?
you could smash them and make mashed potatoes, there are also potato pancakes. They are probably too cooked (done) for potato soup.





Potato Pancakes are good with Pork Chops


INGREDIENTS


5 pounds potatoes, peeled


1 onion


3 eggs, beaten


2 1/2 cups dry pancake mix


2 teaspoons salt


1 teaspoon ground black pepper


1 tablespoon vegetable oil








DIRECTIONS


In a food processor grate potatoes and onion. In a large bowl combine potatoes, onions, eggs, pancake mix, salt and pepper.


Heat oil in a large skillet over medium heat. Spoon potatoes into skillet and cook as you would pancakes, for 3 to 4 minutes on each side.





You could smash them and serve with Bacon Bits (real) and cheese...you could even add Broccoli.Does anyone have recipes for left over baked potatoes?

POTATO AND EGG BAKE





1/2 teaspoon butter


1 1/2 cups mashed potatoes


4 eggs


2 tablespoons grated Velveeta Cheese


1 teaspoon paprika


1/2 teaspoon salt


1/8 teaspoon pepper


1/8 teaspoon garlic powder





Preheat even to 400掳F.


Prepare mashed potatoes as you normally would.





Butter a 9 inch casserole or baking pan. Spread hot mashed potatoes evenly in the pan and make 4 indentations. Break an egg into each well. Sprinkle Velveeta over the potatoes and eggs.





Season with salt, pepper and garlic powder. Top with a sprinkling of paprika.





Bake in oven for 10 minutes until the eggs have set and the cheese is melted.

HEAVENLY TWICE BAKED POTATOES





1 small yellow onion diced


olive oil


5 baking potatoes


3/4c milk


2tbsp. butter


1 tsp pepper


4oz(1/2 bag) kraft shredded cheddar cheese





Pre-heat oven to 350 place baking potatoes directly on oven rack and bake for 1hour 20minutes.


Meanwhile, cover the bottom of a skillet or frying pan with olive oil add onions to oil and sautee until tender (About 5 minutes) Remove onions from heat; drain excess oil. Add onions to medium mixing bowl.





When potatoes are done, take out of the oven and cut the top 1/4 off of each potato (the long way) Scoop potato out of the shell and into mixing bowl with the onions. Add milk, butter, and pepper to mixture. With mixer, combine ingredients until well blended. Add cheese and mix with spoon.





Place potato mixture into a medium sized plastic bag. Twist bag (bag should appear as a pastry bag) with scissors, clip the corner off the end of the bag. Squeeze the potato into each shell. place on cookie sheet and bake another 20 minutes, or until cheese is melted and light brown crust forms on top of potatoes.
TEXAS RANCH HASHBROWNS





Leftover baked potatoes, skins left on


Garlic salt or fresh garlic to taste


2 tbsp. parsley flakes (dried or fresh)


butter or bacon fat or olive oil to cover bottom of pan


Shredded Colby and Monterey Jack cheese


1 pt. sour cream


Salt and pepper to taste


Raw, chopped onion (optional)





Slice cold potatoes with skins left on. Brown potatoes and garlic slowly in oil (or whatever). Sprinkle parsley flakes, salt, and pepper over potatoes and stir gently to brown both sides. When hot and browned, sprinkle cheese and toss or stir until cheese melts and mixes with potatoes. Remove from fry pan. Serve with sour cream and raw chopped onion. (Can also use chopped bell pepper in cooking.) Amounts of cheese depends on how many potatoes used - we like lots of cheese.
Stuffed baked potatoes...scoop out the flesh of the potato, mash them like you would mashed potatoes (I always add a little garlic), put them back in the skins, top with cheese and pop in the oven until the cheese is melted and they are warm through.
My grandkids like them this way: Spray a frying pan with some cooking spray. Slice the potatoes and add some diced onion and bell peppers. Cook them, flipping them often, till the onions are cooked. It doesn't take as long as using raw potatoes, so you can cook scrambled eggs with cheese at the same time and they are done at the same time.
Potato hash. Dice and sautee some onions peppers until soft. I would also add small cubes of pancetta or bacon. Add the potato meat. Rosemary and Tyme goes well and season with salt and pepper. Cook it in a cast iron over medium heat until it starts to burn on the bottom and flip it. and make the otherside crunchy. Serve as a side with any meat.
Potato pancakes!!! Yum! All you need to do is add egg, milk, green onions, salt and pepper to your already cooked baked potato. Mash the potatoes (you can leave the skins on if you like) and start small, add one egg and a few tablespoons of milk until you get a ';batter'; like consistency, add salt and pepper to taste and then cook in a skillet just like a pancake. I like to use heavy cream in place of milk but it is definitely more rich that way.

Grated them and maked hash browns, just brown up in a skillet - they are the best for hash browns.

The potatoes have already been cooked so the chips will be nice and soft.
