Does anyone have any good recipes using blackberries?

I have millions of blackberries growing on my property, and they will be ready to pick soon, i wanted to try something different with them, any ideas? thanks!!Does anyone have any good recipes using blackberries?
Blackberry fool with hazelnut biscuits





Serves 4











Preparation time over 2 hours





Cooking time less than 10 mins





Ingredients


For the fool:


300g/11oz blackberries


75-100g/3-4oz sugar


juice of 1 lemon


120ml/4fl oz double cream


50g/20z mascarpone or extra 50ml/2fl oz double cream


For the hazelnut biscuits:


375g/13oz caster sugar


250g/9oz unsalted butter, softened


2 size 1 eggs


1 tsp vanilla essence


275g/10oz plain flour


1 tsp bicarbonate of soda


1 tsp baking powder


150g/5oz hazelnuts, roasted, peeled and chopped











Method


1. To make the fool, reserve a handful of blackberries for the garnish and pur茅e the remainder with the sugar in a blender then rub through a fine sieve. The resulting pur茅e should be thick. The quantity of sugar relies heavily on the natural sweetness (or lack of it) of the blackberries.


2. Add the lemon juice, then taste and adjust the flavouring.


3. Whisk the double cream to just soft peaks, not any thicker.


4. Soften the mascarpone by beating by hand and then whisk the two gently together. It is important not to overbeat this mixture. It can be taken too far and then the fool will have a grainy texture.


5. Finally, fold this mixture together with two-thirds of the pur茅e. The remaining one third should be kept aside until assembly.


6. In a sundae dish or wine glass, place a few blackberries tossed in a spoonful of the reserved pur茅e. Fill the glass half-way with the creamy mixture. Place a thin layer of the pur茅e on top of this layer before filling the glass with more creamy mixture.


7. Fill the other dishes in the same way.


8. Chill in the fridge for at least 2 hours to firm up the mixture.


9. Preheat the oven to 180C/350F/Gas 4.


10. Grease a baking sheet.


11. To make the biscuits, cream the sugar and butter together until light and fluffy.


12. Add the eggs and vanilla essence and mix again until it is all incorporated together.


13. Sift together the flour, bicarbonate of soda and baking powder.


14. Fold this mixture into the butter/egg mixture.


15. Finally, fold in the hazelnuts.


16. Using a spoon, drop spoonfuls on to the baking sheet, leaving space between them to allow for spreading.


17. Bake in the oven for about 8 minutes until golden brown.


18. Remove from the baking sheet and leave to cool on a wire rack.


19. Serve the mousse with the hazelnut biscuits and garnished with the reserved blackberries.Does anyone have any good recipes using blackberries?
Blackberry and Blueberry Pie: If you want to use all blackberries go ahead and substitute the blueberries.








INGREDIENTS


2/3 cup shortening


2 cups all-purpose flour


1 teaspoon salt


5 tablespoons cold water


3/4 cup white sugar


1/3 cup all-purpose flour


1/2 teaspoon ground cinnamon


4 cups fresh blueberries


1 1/2 cups fresh blackberries


1 tablespoon lemon juice


2 tablespoons butter








DIRECTIONS


Cut shortening into 2 cups flour and salt until particles are size of small peas. Sprinkle in water 1 tablespoon at a time until flour is moistened. Gather into a ball, and roll out onto a lightly floured board. Make two rounds. Place one crust in a 9 inch pie dish.


Mix sugar, 1/3 cup flour, and cinnamon. Stir in berries to coat. Turn filling into pastry lined pan. Sprinkle with lemon juice, dot with butter. Cover with top crust; cut slits in the top. Seal and flute.


Bake at 425 degrees F (220 degrees C) for 35 to 45 minutes. Cover edges with foil to prevent burning, and remove foil for last 12 minutes of baking.
I have made this many times, you and Jeremey will love it, maybe the kids also lol!

鈥?3/4 cup milk, more or less


鈥?2 cups fresh cleaned and sliced blackberries


鈥?3/4 cup granulated sugar


鈥?1 tablespoon butter, cut in several small pieces


PREPARATION:


Sift together the flour, baking powder, salt, and 1 tablespoon sugar. Cut in shortening until mixture resembles meal. Add enough milk to make a soft dough. On a lightly floured surface, roll dough out into a 1/4-inch thickness.








Spread with blackberries to about 1/2-inch of edge. Sprinkle 3/4 cup sugar evenly over the berries then dot with the butter. Roll up like a jelly roll and seal ends. Place in a greased shallow baking dish. Bake at 425掳 for 25 to 30 minutes. Serve with cream or whipped topping.

Blackberry Cobbler





* 1 cup all-purpose flour


* 1 1/2 cups white sugar, divided


* 1 teaspoon baking powder


* 1/2 teaspoon salt


* 6 tablespoons cold butter


* 1/4 cup boiling water


* 2 tablespoons cornstarch


* 1/4 cup cold water


* 1 tablespoon lemon juice


* 4 cups fresh blackberries, rinsed and drained





1. Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.


2. In a large bowl, mix the flour, 1/2 cup sugar, baking powder, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in 1/4 cup boiling water just until mixture is evenly moist.


3. In a separate bowl, dissolve the cornstarch in cold water. Mix in remaining 1 cup sugar, lemon juice, and blackberries. Transfer to a cast iron skillet, and bring to a boil, stirring frequently. Drop dough into the skillet by spoonfuls. Place skillet on the foil lined baking sheet.


4. Bake 25 minutes in the preheated oven, until dough is golden brown.
Have you considered homemade blackberry ice cream?





I use store-bought blackberries, and it's great. Your ice cream would not doubt be to die for! I tried ice cream made from wild blueberries and that was *SOOOOO* good!

Hint - if you want to include some of the berry flesh (i.e. the stuff that is left over once the juices have been extracted) to be included in the ice cream (you add that LAST), place the mush in the freezer while the ice cream is congealing, so that it does not melt the ice cream.


Or, better yet, freeze some whole blackberries ahead of time since you have loads of them to included in the ice cream once the congealing process is finished.
You can substitute blackberries For blueberries in muffins, and you can also switch them for strawberries in short cake , quite a pleasant change.And there is nothing to me as good as blackberry jam served on a good hot buttered biscuit.

i like taking blackberries, blueberries and heavy whipping cream, mixing it in a small bowl and topping with a teaspoon of sugar...mmmm, seriously good sweet snack!!!
Mix it up with bananas and milk, whip it up and make yourself a shake!
tarts are excellent!!! not sure the recipe but my parents always made it, maybe google it?
