Any good cold entree recipes?

Preferrably with minimum dairy, as I'm lactose intolerant. I don't want to make anything hot because it's not as heck here, and I did waldorf salad last night (with soy products rather than dairy) so I don't want anything too similar to that. Any ideas are welcome. Please help!Any good cold entree recipes?
Black Bean Salad


THIS IS SOOO GOOD!!





1 (15 ounce) can black beans, rinsed and drained


2 (15 ounce) cans whole kernel corn, drained


8 green onions, chopped


2 jalapeno peppers, seeded and minced


1 green bell pepper, chopped


1 avocado - peeled, pitted, and diced


1 (4 ounce) jar pimentos


3 tomatoes, seeded and chopped


1 cup chopped fresh cilantro


1 lime, juiced


1/2 cup Italian salad dressing


1/2 teaspoon garlic salt





DIRECTIONS


In a large bowl, combine the black beans, corn, green onions, jalapeno peppers, bell pepper, avocado, pimentos, tomatoes, cilantro, lime juice, and Italian dressing. Season with garlic salt. Toss, and chill until serving.








This is the base recipe but if I don't have some of the ingredients I just leave them out or sub them for what I do have!! Its always GOOOOOODAny good cold entree recipes?
I like this best served cold in a wrap.





HOISIN CHICKEN SALAD





1 cup chopped cooked chicken


1 cup packaged coleslaw mix (cabbage and carrots)


1/2 cup chopped green onions


2 tablespoons chopped peanuts


2 tablespoons bottled hoisin sauce


few dashes of hot sauce





Mix all ingredients in a large bowl. This can be served cold. For a hot entree, microwave mixture for 2 or 3 minutes.





Ideas: For Hoisin Chicken Wraps, wrap in flour tortillas.
Here are some ideas you might enjoy:





1. Pasta salad with sundried tomatos, sliced olives, chopped bell pepper, chopped green onion, prosciutto or chunked salami, Italian dressing. If you can find some lactose free cheeses or soy based cheese for the feta or goat cheese, it adds some great flavor.


2. Tuna salad nicoise: canned or fresh grilled ahi tuna; baby romaine lettuce; chopped hard cooked egg; asparagas; kalamata olives; anchovy vinagrette.


3. Rotisseried chicken (from the store); fruit salad with poppyseed dressing; coleslaw.


4. Chinese chicken salad: 2 chicken breasts, cooked and chopped; 1 head green cabbage, chopped; 2 packages ramen noodles; 1 bunch green onion, chopped; 3 T vege oil, 3 T sesame oil, 1 T sugar, 1 tsp worcestershire sauce, 2 T rice wine vinegar, 2 T toasted sesame seeds. Mix dressing together, season to taste with salt and pepper. Toss chicken with cabbage, green onion, and broken ramen noodles. Toss salad with sesame seeds and dressing.


4. Poached salmon with dill sauce: poach salmon filet on top of stove in either a large saute pan or poaching pan with white wine, lemon juice, onion, lemon slices, fresh cilantro, capers. Chill. For dill sauce, mix together 1/2 cup mayonaise, 1/4 tsp onion powder, 1/4 tsp. celery powder, 1 T fresh dill, chopped, salt and pepper to taste. Serve cold with sliced tomatos and cucumbers.
I just made a cold salmon salad: 1 1/2 cup canned or leftover salmon, 1 celery stalk chopped, 1/4 cup minced onion 1/2 cup mayonaise, 1/4 cup sour cream, 1 Tbsp. prepared horseradish, 1 cooked diced potato (optional), 1 tsp. dried dill weed or taragon, salt %26amp; pepper. Combine all and serve on lettuce leaves, cold.
i dont actually have a recipe to give you, but i do have a good idea. you can use almost any cold pasta salad, and just add chicken or tuna, or some other protien to it to make it a meal. my favorite website for recipes is allrecipes.com. good luck!
I'm lactose intolerant too, and make Taco Salad with shredded soy ';cheese'; (shredded iceberg lettuce, can of drained pinto beans, tomatoes, onions, avocados %26amp; tossed with salsa) ...... Or Nicoise Salad (no dairy) ......Chinese Chicken Salad (no dairy)
just make a microwavable dinner and eat some fresh veggies and maybe some ice cream for dessert!
