Substitution
Use a shredded pizza cheese blend instead of the Cheddar for even more flavor.
Time Saver
Save yourself the time and tears of chopping onions by using 1/2 cup frozen (thawed) chopped onion instead of fresh.

What are some good Congolese or Afghan recipes?
I'm doing a project for one of my classes and we have to bring in a food from either the Congo or Afghanistan/Iran. Now of course I've googled it already, but there are a billion things I don't even know where to begin to look! Preferably an appetizer, something not incredibly heavy, I need something that's relatively easy to make (although I don't mind making things that are more complicated, I'm a pretty good cook), but preferably doesn't have meat (although I'm flexible with that too). Any suggestions? What are some good Congolese or Afghan recipes?
I'd suggest making Spicy Fried Plantains as a Congolese appetizer. All of the ingredients are easily found in any grocery store and it doesn't take to much effort to make.
Ingredients
4-6 plantain bananas slightly ripe, peeled and cut into bite-sized cubes
陆 tsp cayenne pepper or red pepper
陆 peeled, grated fresh ginger root
1 teaspoon salt
2 tbsp water
1-2 cups vegetable oil for frying
Directions
Grind together grated ginger root, pepper, and salt, and then mix with water. In a glass bowl toss together the plantain cubes and spice mixture. In a deep skillet, heat oil up to 350 degrees F. Fry plantains, turning once, until golden brown on both sides. Drain on absorbent paper, keep in warmed oven until all the plantains are fried. Serve immediately. What are some good Congolese or Afghan recipes?

AFGHAN NOODLES
8 oz. wide curly egg noodles
1 c. low-fat yogurt, drained in a fine-meshed sieve or a cheesecloth lined sieve for 30 minutes
4 tbsp. chopped fresh mint or 2 tbsp. dried mint
2 1/2 tsp. chili powder
1 tbsp. fresh lemon juice
1 tbsp. safflower oil
1 onion, finely chopped
1 lb. lean ground beef
1/2 tsp. salt
1 ripe tomato, peeled, seeded and chopped
1 tbsp. unsalted butter
To prepare the sauce, combine the drained yogurt with 3 tablespoons of the fresh mint or 1 1/2 tablespoons of the dried mint, 1/2 teaspoon of the chili powder and the lemon juice.
Heat the oil in a large, heavy-bottomed skillet over medium high heat. Add the onion and saute it for 3 minutes. Add the beef, the remaining 2 teaspoons of chili powder and the salt, and cook the mixture for 6 minutes, stirring frequently. Stir in the tomato and cook for 2 minutes more.
Meanwhile, cook the egg noodles in 3 quarts of boiling water with 1 1/2 teaspoons of salt until they are al dente, about 9 minutes. Drain the noodles and return them to the pot. Add the butter and stir gently until it melts and the noodles are coated.
To serve, transfer the hot noodles to a warmed serving platter. Pour the sauce over the noodles in a ring an inch or two in from the edge of the noodles, then arrange the beef mixture in the center of the ring. Sprinkle the remaining mint over the top of the assembly and serve immediately. Serves 6.

Kishmish Panir (Cheese with Raisins)
Ingredients
1 gallon of milk
White vinegar
Cheesecloth
1 box black seedless raisins
In a large stockpot, add a small amount of water to barely cover the bottom of the pan. Add1 gallon of regular whole fat milk to the pot and bring to a boil. Stirring helps the bottom not to burn and the milk to boil faster. NEVER LEAVE UNATTENDED.
As the milk begins to steam, take about 1/4 cup of white vinegar and put it next to the stove. When the milk starts to rise in the pan, add the vinegar in a circular pattern. Take the pan off of the heat. Take a slotted spoon and start helping the curds and whey separate (some people like to lightly salt the cheese, if you would like to, add two good pinches of salt at this point).
After about 5 minutes you should have a good amount of separation. In the sink and over a colander, double fold a cheesecloth and press into the shape of the colander. Using thick, new kitchen gloves (the kind used for washing dishes), slowly pour the contents of the pot into the cheese cloth, when all of the curds are in the cheesecloth, gather the ends of the cheesecloth together and twist. The VERY hot whey will come out and shape the curds into a ball. Press to make it smooth and round. Twist and press two or three times only and the place the cheesecloth on a plate in the refrigerator.
You do not want to twist too much or else the cheese will be crumbly. When the ball has cooled, take it out of the cheese cloth and wrap it in foil until you are ready to cut. Cut the cheese in slices down the ball so that you end up with thick slices, and then cut the slices into cubes. Fill half of the plate with cheese and place raisins on the other half of the plate and serve. The cheese can last 2-3 days, slightly longer if salt was added.

***PERFECT CHOCOLATE CAKE
4 ounces unsweetened chocolate
1/2 c. milk
1 c. brown sugar, packed
1/4 tsp. Jamaican allspice
1 egg yolk
2 c. cake flour
1 tsp. baking soda
1/2 tsp. salt
1/2 c. butter
1 c. superfine sugar
2 egg yolks
3 T. water
1/2 c. milk
1 tsp. vanilla
1 Tbsp. dark rum
2 egg whites, whipped
Preheat oven to 350 degrees F. Grease 2 - 9 inch layer cake pans.
Whisk together chocolate, milk, allspice, brown sugar and one egg yolk in the top of a double boiler, stirring until a custard is formed and mixture thickens. Cool. Stir in baking soda and salt. Sift the flour onto waxed paper.
In bowl of electric mixer, whip the butter, gradually adding sugar and two egg yolks, one at a time, beating well after each addition.
In a cup, stir together 3 T. water, 1/2 c. milk, and 1 tsp. vanilla extract and 1 Tbsp. dark rum.
Add the flour mixture to the butter mixture alternating with the vanilla/milk/water mixture. Stir in the chocolate custard mixture and beat until smooth, approximately two to three minutes at medium speed of mixer.
In a clean bowl, using the wire whisk attachment of your electric mixer, beat two egg whites until soft peaks form; gently fold into cake batter.
Turn into greased layer cake pans. Bake at 350 degrees F. for about 25 minutes or until cake tester or toothpick inserted in center comes out clean.
Turn out onto wire racks to cool. Level with a serrated knife if required, then stack and frost with chocolate frosting.
Note: This recipe calls for superfine sugar, not to be confused with confectioners or 10X sugar. If you don't have superfine sugar you can pulse regular granulated sugar in the food processor to substitute. Domino supplies superfine sugar in 1 pound packages at the supermarket or in larger quantities at the bakery supply or foodservice outlet. Superfine sugar dissolves readily and works best for cakes, helping to produce a lighter texture.
***DECADENT CHOCOLATE CAKE WITH SAUCE
1 cup semi-sweet chocolate chips
1/2 cup butter
1/2 cup all-purpose flour or cake flour
4 eggs, separated
1/2 cup sugar
1/2 cup semi-sweet chocolate chips
2 tbs. butter
2 tbs. corn syrup
Heat oven to 325掳F.
Grease a spring form pan, 8x2 1/2 inches, or round pan 9x1 inches. Heat 1 cup of chocolate chips and 1/2 cup of butter in a 2-quart heavy saucepan over medium heat until chocolate chips are melted; cool 5 minutes. Stir in flour until smooth.
Stir in egg yolks until well blended. Beat egg whites in a large bowl on high speed until foamy. Beat in sugar, 1 tablespoon at a time, until soft peaks form. Fold chocolate mixture into egg whites. Spread in pan.
Bake spring form 35 to 40 minutes, or round cake pans for 30 to 35 minutes (top will appear dry and cracked) or until toothpick inserted in center comes out clean; cool 10 minutes.
Run knife along side of cake to loosen; remove bottom of spring-form pan and cool cake completely. Place on serving plate.
Heat 1/2 cup chocolate chips, 2 tablespoons butter, and the corn syrup over medium heat until chocolate chips are melted.

Does anyone know any good recipes for fruits and veggies??
Since its spring and about 2 months 'til summer I thought I should be eating healthier. Does anyone have any good recipes for cooking fruits/vegetables??Does anyone know any good recipes for fruits and veggies??
It's always better to eat fruits and veggies raw for nutritional purposes. But that can get old so heres some Ideas. Steamed vegies are good and insted of seasoning with salt try some low cal butter, salads are good with low cal dressing (low cal italian tastes just like reg itatian), raw celery w/ peanut butter (not a whole lot of pnbutter tho).
Try grilling your veggies too. When grilling out....wrap you corn on the cob in aluminum foil and grill it for about 30 min.
You can steam veggies that way also. Make an aluminum pouch put in your veggies and a cube or 2 of ice the ice will melt creating a steam which will cook you veggies. If you like red, yellow, bell peppers cut them in half deseed them and throw them directly on the grill until tender. Adding onion to any veggies dish will season it with out salt. Using more spices insted of salt and butter can cut down on cal.
As for fruits you can do so much. One thing I've done for my kids is take apples peel them slice them, add some sugar (or sugar substitute) and cinimmon carmelize the apples and sugar. Get a cup cake pan spray with pam or what ever use regular loaf bread cut by a round cookie cutter press down into cup cake pan add apple mixture bake on 300 to 350 until bread is golden. My kids love 'em.
I hope these help some happy cooking.....Does anyone know any good recipes for fruits and veggies??

Half zuchinni length wise use a spoon and dig out the flesh in the middle fill the middle with the filling you just made. Top with grated Mozzerella and bake for 25 min at 350 and enjoy. Good Luck

I like chocolate covered pretzels. Take almond bark, your favorite flavor, melt it in double boiler. If you don't have a double boiler, you can use a pot with water, place a glass or metal bowl or another pot on top, making sure it doesn't touch the water. Once it is melted, take pretzels, using a fork or spoon, and let the kids dip the pretzel into the cholocate.

Funnel Cake
1 cup water
3/4 stick butter (6 tablespoons)
1 tablespoon sugar
1/8 teaspoon salt
1 cup flour
1 cup eggs, about 4 large eggs and 2 whites
Vegetable oil, for frying
Powdered sugar, for topping
Boil water, butter, sugar, and salt together in a saucepan. Add flour and work it in until it is all incorporated and dough forms a ball. Transfer mixture to the bowl of a standing mixer and let cool for 3 to 4 minutes. With mixer lowest speed, add eggs, 1 at a time, making sure the first egg is completely incorporated before continuing. Once all eggs have been added and mixture is smooth, put dough in a piping bag fitted with a number 12 tip. Heat about 1 1/2 inches of oil in a heavy pan. Pipe dough into oil, making a free-form lattice pattern; cook until browned, flipping once. Remove cake from oil, drain on paper towels, and top with powdered sugar. Continue until all of the batter is used.
Any sweet, crunchy apple such as Gala or Fuji works well in this recipe.
Apple Cheddar Quesadillas
Serves 6
1 large or 2 small apples
6 whole wheat tortillas
11/2 cups sharp cheddar cheese, shredded
2 TB butter
Thinly slice the apples into 24 1/4';-thick slices. Sprinkle 2 tablespoons cheese over one half of the tortilla. Place four apple slices, barely overlapping, on top of cheese. Then sprinkle 2 more tablespoons of cheese on top of the apples and fold the tortilla in half. Repeat with remaining tortillas. Heat 1 tablespoon butter in a large skillet over medium-high heat and cook three quesadillas until the cheese melts and the tortillas are golden brown on both sides, about 2 minutes per side. Repeat with the remaining butter and tortillas.
I make chocolate truffles with my kids, its really fun for them.
Buy the best quality bittersweet chocolate you can find. Melt it in a double boiler (water should not touch the bottom of the boiler). put the metled chocolate in a bowl and add 1/2 the volume in heavy cream (1 cup chocolate, then 1/2 cup heavy cream). A few tables spoons of butter. then let them choose what they want to mux into it. As then mix it, the mixture will get solid and truffle like. If not, then put it in the refrigerator.
Then you scoop with a small melon baller (keep a pot of water boiling to dip the melon baller every few balls, it will then slice through the mixture like a hot knife on butter). Refrigerate the truffle balls until sold, let them decorate with powered sugar, cocao powder, or tempered chocolate.
My kids have really enjoyed making this with me.

What are some good/simple recipes for a single college student?
when I was back on a super tight budget I had to come up with tastey cooking too. Here are some that I make even today. I think they're real nice.
--Saute some onions and garlic and tomato with a can of tuna, add salt and pepper, cumin, paprika, a little water to make creamy, cook for about 5 minutes and serve with some rice.
--Put a chicken in a roasting pan with some chopped potatoes, carrots, onions, other vegs you want, and rub the chicken with some olive oil, garlic powder, cumin, cinnamon, salt and pepper. You can add whatever spices you like. Bake covered at 350 for about an hour. If you like it browned on top take the lid off for the last 15 min.
--fried rice:
saute chopped onions, garlic, green onions, green pepper, in some oil. when soft add cooked white rice. stir and then add a scrambled egg. add a couple TBS soy sauce and mix through. (You can add anything you want to this, cooked chicken pieces, peas, corn, potatoes, very versitile.)What are some good/simple recipes for a single college student?
Hot open faced roast beef sandwich
Go to the Deli and buy you some thin sliced roast beef, either regular or Cajun
And some Swiss cheese
Purchase you some brown gravy, they sell it in a can, or in a package, you just add water and bring to a boil
Now make some mashed potatoes, drain, add butter, salt, pepper and a splash of milk
Now lay a slice of bread on your plate, heap on the mashed potatoes, now Swiss cheese, now roast beef, now gravy

Texas Tommies are simple, cheap and tasty! Enjoy!
Ingredients: hot dog, hot dog bun (even better on soft sub roll), bacon, provolone cheese
Preheat broiler.
Microwave 2 pieces of bacon. While that's cooking, cut hot dog length-wise and fry in pan for a couple minutes on both sides.
Separate bun and put on baking pan. Place hog dog on bun, with bacon on top. Top that with 2 pieces of provolone. Place under broiler. The top bun will get toasted before the cheese is melted on the other half, so take top bun out when lightly browned, then butter it. By the time you're done doing that, the cheese is melted and it's ready to eat!
My husband LOVES these! They take about 5 mins to make. Enjoy!
Vegetable Nachos
slice up some red, yellow, and green bell peppers. Sprinkle your favorite grated cheese and microwave for 3 minutes on medium. .. Really good!!
Antipasto Platter
sliced cheese
salami
pepperoni
marinated mushrooms
artichoke hearts
olives
Arrange artistically on large platter and serve.
Apricots
2 oz. bittersweet chocolate
24 dried apricots
1 t. finely chopped nuts
Microwave chocolate on high for 2 minutes, stir halfway through until completely melted. Dip fruit halfway into the chocolate. Let the excess drip off. Pace on waxed paper. Sprinkle with nuts over the chocolate covered portions and place in refrigerator until chocolate is set. Makes 8 servings.

1/4 cup olive oil
1/2-ounce salt
2 pounds flour
1/4 cup cornmeal
Tomato sauce:
4 vine ripened tomatoes, peeled, seeded, chopped
1 tablespoon chopped roasted garlic
1/4 cup chopped red onion
2 tablespoons finely sliced scallions
2 tablespoons taro oil or olive oil
1 teaspoon salt
1 teaspoon black pepper
Yellow tomato sauce:
2 ripe yellow tomatoes, peeled, seeded, chopped
1 teaspoon minced garlic
1 tablespoon chopped fresh parsley
1 teaspoon chopped fresh thyme
1 teaspoon salt
1 teaspoon black pepper
Kalua pork:

1 1/2 tablespoons liquid smoke
2 1/2 tablespoons sea salt
3 cups chicken stock
10 Ti leaves or green cabbage leaves
Toppings:
3 ounces shredded Fontina
1-ounce grated Parmesan
Place the yeast, sugar, and 1 cup of water in a mixing bowl and dissolve the yeast. Add the remaining ingredients except for the cornmeal and mix on slow speed with a dough hook until a ball is formed. Change the speed to medium and mix for an additional 1 to 2 minutes until a sooth and elastic dough is formed. Place the dough in a lightly oiled bowl or pan cover and allow the dough to rest for approximately 4 hours.
To make the tomato sauce, place all of the ingredients in a mixing bowl, combine well and adjust the seasonings. Let the flavors combine for approximately 30 minutes or longer.
To make the yellow tomato sauce, combine all of the ingredients into a blender and puree. Adjust the seasoning.
Preheat oven to 350 degrees F. Rub the pork with the smoke flavoring and sea salt. Using a roasting pan, line the bottom with 1/2 of the leaves and place the pork butt on top. Add the chicken stock, being careful not to pour on top of the pork. Cover with the remaining leaves. Cover tightly with foil and roast for approximately 3 1/2 hours. Cook the pork to a minimum internal temperature of 165 degrees F. When done the pork should shred easily and be very moist.
To make the pizza, press or roll out the dough to approximately 1/4-inch thick. Transfer the pizza to a pizza peel dusted with cornmeal. Add the yellow tomato sauce and spread evenly. Add the fontina cheese, shredded pork, tomato mixture, and finish with some grated Parmesan. Place pizza in a hot oven turning occasionally until crust is evenly browned and the bottom is golden in color. Remove from oven, slice, and serve.

Hawaiian Chicken Wings
4 lbs. chicken wings
1/4 C butter
1/2 C tomato ketchup
2 cloves garlic, minced
1 C fine dry bread crumbs
1 can - 14 oz., pinapple chunks
2 T brown sugar
2 T fresh ginger, grated
1 T Worcestershire sauce
1 tsp. Asian style hot sauce, my favorite brand is Tuong Ot Sriracha, find it in an Asian grocery or well stocked supermarket
First Prepare the Wings
Prepare chicken wings by cutting off wing tips and separating the wing at the elbow joint (discard tips or save for making stock). Don't get intimidated at this process, it's very easy.
Then
Melt butter in shallow baking pan in 400掳F oven.
Stir together ketchup and garlic and brush over wings, then roll them in the bread crumbs to coat evenly. Place in pan, turning to lightly coat with butter. Bake for 20 minutes.
Meanwhile, drain pinapple, reserving the juice. Add water to the reserved juice to make 3/4 cup liquid. Stir in the brown sugar, ginger, Worcestershire sauce and hot sauce.
After wings have cooked 20 minutes, turn them over, then pour on sauce the sauce. Bake for about about 20 minutes longer or until chicken is tender. Add the pinapple for last 5 minutes of cooking. Finished wings should be lightly browned.

Anyone know any good dessert recipes?
well i want to make something simple like brownies or cookies for my family but i cant find any good recipes.
anyone got any other ideas.. or websites i can go 2?Anyone know any good dessert recipes?
There are lots of good websites that have lots of recipes. I'll list some in sources.
There are a couple really good cake recipes I like that are great for summer. One is a Jell-O poke cake. I can't remember the exact recipe, but there are plenty of versions of it on the Kraft Foods website. Just type ';jell-o poke cake'; in the search box, and look at the Kraft Recipes tab and the Member Recipes tab to find the one you like the most. (I personally prefer the ones that use pudding in between the cake and the whipped topping.) The great thing about a Jell-O poke cake is that you can customize it, i.e., what flavor cake, jell-o, and pudding to use. (I like white cake with either lime or black cherry jell-o and vanilla pudding.)
The other spring/summer cake recipe I like is a recipe I got from my boss for Pineapple Pudding Cake. Here is the recipe:
Pineapple Pudding Cake:
Ingredients:
1 box Jiffy yellow cake mix* (and whatever ingredients are needed to make the batter, per box directions)
1 8-oz. package of cream cheese, softened
1 small package instant vanilla pudding
1-1/2 cup cold milk
1 large can crushed pineapples, drained
1 8-oz. tub of Cool Whip (thawed but chilled)
A small amount of shelled walnuts, crushed (optional)
Cake directions:
1.) Preheat the oven according to the box directions for the cake mix and the type of pan you are using (metal, glass, etc.).
2.) Prepare the yellow cake mix batter according to box directions and pour it into a greased 9'; X 13'; pan.*
3.) Start checking the cake after about 15 minutes (it鈥檚 hard to say exactly how long it will take, as there are no directions for baking a Jiffy yellow cake mix in a 9'; X 13'; pan, or for baking half of a regular yellow cake mix).
4.) Remove the cake from the oven when the top is golden brown and a toothpick stuck in the center of the cake comes out clean.
5.) Allow cake to cool.
Topping directions:
1.) Whip the softened cream cheese with a mixer until smooth.
2.) Slowly beat in the instant pudding mix until well blended.
3.) Slowly beat in the milk until mixture is smooth and well blended.
4.) Spread the cream cheese/pudding mixture evenly over the cooled cake.
5.) Spread drained crushed pineapples evenly over the pudding mixture.
6.) Frost the cake with the tub of Cool Whip.
7.) If you鈥檇 like, sprinkle the top of the cake with crushed walnuts. (Crushed macadamia nuts might also work well here.)
8.) For best results, allow the cake to chill in the refrigerator for at least a couple of hours before serving.
Enjoy!
* If you cannot find Jiffy yellow cake mix, use a regular box of yellow cake mix (Betty Crocker, Duncan Hines, etc.). Prepare the batter according to box directions, but only pour half of the batter into the cake pan. This works out great if you鈥檙e making two cakes but is a bit wasteful otherwise! If you don鈥檛 want to be wasteful and don鈥檛 mind having a thicker cake, then by all means, pour all the batter into the cake pan and follow the baking directions on the box. Just make sure the pan you鈥檙e using is deep enough to accommodate a thicker cake and all the toppings.
I hope that helps! Good luck! :-)Anyone know any good dessert recipes?
Thanks for choosing my answer! I hope you enjoyed whatever you decided to make! The pineapple pudding cake is always a hit when I take it to a party. :-) Report Abuse
If you have any caramel delight girlscout cookies left, you can use them to make brownies. Just buy a brownie mix from the store and after mixing it, put 1/2 of it in the bottom of a baking pan, then place the cookies in rows on top of the mix, then pour the remaining brownie batter over it. Follow the directions on the box for how long to bake. It melts the carmel and coconut into the brownie and is soooo good!

It is kind of like a fried rice in a way. We eat it with cucumbers and I like to add cayenne pepper to mine to give it a bit of a kick.
There is this one too that is super easy, cheap and pretty tasty.
