what are some of your personal favorite recipes for picnics, barbecues, family outdoor gatherings, etc.... It could be recipes for grilling meats, veggies, maybe a special salad or dessert....anything that you learned to love on these special days. Yeah, I could of went to a online recipe sight but I rather have recipes from people who have made them and can tell me what makes it so special so any help you can offer would be greatly appreciated.Some of your favorite recipes for barbecues or picnics?
Well since we are having a BBQ Saturday; here is what we are having:
**Ribs-boiled for one hour or until fork tender, then put on the grill with BBQ sauce. We are using Stubb's.
**Fajitas-pre marinated. Nothing to it!!!
**Bacon wrapped smokies-easy, LOL Bacon wrapped little smokies then topped with about a cup of brown sugar. Baked in the oven at 400* til done. About 30 minutes.
**Teriyaki skewers-my marinade, overnight
1/2 cup sugar
1/2 cup soy sauce
1/4 cup cidar vinegar
1 tsp. chopped garlic
1/2 tps. ground ginger
1/4 tsp. pepper
*Bring to boil. After marinating, take 1 Tbs. corn starch and 1 Tbs. water and whick. Add to leftover marinade and boil for a few minutes, until thickened. Baste chicken with this glaze.
**Rolls-Frozen in package
**Pasta Salad-
1 bag tri-colored spiral pasta
1 bottle Zesty italian
1 pkg. pepperoni; cut in half
1 small can sliced black olives; drained and rinsed
1 bag chunky shredded cheese (2 cups)
*Boil pasta til al dente, add rest of ingredients.
**French onion dip and crackers-1 pkg. onion soup mix and 2 cups of sour cream.
**Devilled eggs
**Caramel and chocolate chip brownies
**Baked beans with brown sugar and bacon

This salad does not have to be concerned with being left in the hot day as there is no Mayo.... every time I bring this people ask for the recipe. One guy told me he wanted to marry me.... I'm sure he was kidding.
Thai Salad
2 packages Ramen noodles 鈥?crushed 鈥?do not use seasoning packet
陆 cup sunflower seeds
陆 cup slivered almonds
陆 cup (I stick) butter/margarine
Saut茅 all above until golden, set aside to cool
Chop 1 head Napa cabbage
Chop 1 bunch green onions
Dressing: Mix together:
1 cup oil
1 cup sugar
陆 cup white vinegar
2 tablespoons soy sauce
1 teaspoon garlic powder
Combine all ingredients just before serving
Everyone always loves this! The coconut is optional (I have one daughter who loves coconut, and one daughter who doesn't like it) ... but kids, especially, love this......
FRUIT AMBROSIA
2 c. heavy whipping cream
1/2 c. sugar
1 tsp. vanilla extract
1/2 tsp. almond extract
1 large can mandarin oranges, drained
1-2 cans fruit cocktail,drained (I like Triple Cherry)
1/2 c. flaked coconut (optional)
3-5 c. miniature marshmellows
Beat the cream, sugar %26amp; extracts until very stiff peaks. Fold in the fruit %26amp; marshmellows. Chill ..... can be done the day ahead
I make a pasta salad with capers, artichoke hearts, lots of eggs and pickles and roasted peppers and canned green chilis. I make a dressing out of some olive oil and the juice from the canned chilis, salt and pepper and a touch of mustard (any kind of mustard). I let it chill overnight. Yum.
I almost always make deviled eggs. Others of my favs are bbq chicken or Kabobs ( I put them together myself cuz you get more for your money). My dad grills turkey on the grill for our get togethers and that tastes amazing. Taco salad and 7 layer salad are other favs of mine. I'm all about the simple stuff.

I like the shrimp+maracino cherry+onion+zuccini/yellow squash - lightly glazed with your favority bbq sauce.
the only downfall is they take awhile to assemble...but if you have help it goes quickly.
throw on some chicken thighs with it...
maybe some sweet potato slices too..or whole...your choice

Best baked beans I ever tasted so I ask for her recipe:
Start with Bush's baked beans any variety (28 oz. size)
1/4 lb. hamburger per can (scramble fry in skillet)
green pepper 1/2 C. per can
onion 1/4 C. per can
tomato ketchup 1/4 C. per can
worshireshire sauce 3T. per can
dark brown sugar 1/4 C. per can
Bake @350 for at least 1 hour but 2 hours even better
Asker's Comment: THANK YOU so much, I made bbq ribs for dinner, %26amp; also made these baked beans, %26amp; they were a HUGH hit. We all loved them so much. Definatly something I will make again, %26amp; again.
Berry Cobbler
Cook berries (2 C.) with 1 cup sugar for 15 min.
Mix in bowl 1/2 C. self rising flour
1/2 C. milk
3 T. butter
In baking dish pour berries and juice and then pour flour mixture over. Sprinkle sugar over crust for a prettier crust
Bake 30-45 min @ 350' the crust should be golden brown.
Chicken or Turkey Salad
buy a roterissery chicken at market or bake one at home, don't boil you lose too much flavor or use left over turkey
debone and chop meat
add 1 c. chopped celery
1/2 c. chopped green onion
1 chopped apple ( I sprinkle ';fruit fresh'; on mine to keep the color from turning, it's in the canning section of market)
enough HELLMAN'S mayo to make creamy
1/4 cup drained dry dill pickle relish
2T. celery seed (whole)
mix well
serve on pumpernickle bread
serve with sliced cantalope, chips, dill pickles, and sweet iced tea and
PULLED PORK BBQ
Ingredients
* RUB:
* 1 Tbsp. paprika
* 1 Tbsp. firmly packed light brown sugar
* 1-1/2 tsp. chili powder
* 1-1/2 tsp. ground cumin
* 1 tsp. coarsely ground black pepper
* 1 tsp. kosher salt
* 1-1/2 tsp. cayenne pepper
* MEAT:
* 1 boneless pork shoulder roast (boston butt)-4 to 5 lbs. rolled and tied (if neccesary)
Directions
1. Preheat grill to medium heat.
2. While grill is preheating, apply rub to roast.
3. Let roast stand at room temperature for 30 minutes.
4. After fire has gone out, arrange coals for indirect heat.
5. Close grill and let stand for 10 minutes.
6. Insert probe thermometer in thickest part of roast (towards the center).
7. Set alarm, if equipped, to 190 degrees F, (if no alarm, roast should take between 3-4 hours to cook).
8. Allow roast to cool, loosely covered, for about 20 minutes.
9. Slice the roast or pull apart with two forks, depending on your preference.
10. Serve on toasted buns with some cole slaw, chips and a pickle.
11. ENJOY!!
SUMMERTIME PICNIC RELISH
Ingredients
* 1 cup chopped white onion
* 1 cup chopped green pepper
* 2 tablespoons salad oil
* 4 firm medium tomatoes peeled and chopped
* 2 tablespoons vinegar
* 1-1/2 teaspoons salt
* 1/2 teaspoon sugar
* 1/4 teaspoon dry mustard
* 1/8 teaspoon freshly ground black pepper
Directions
1. In large skillet cook and stir onion and green pepper in oil over medium heat until onion is tender.
2. Stir in remaining ingredients and heat to boiling.
3. Cool then cover and refrigerate several days.
EGGPLANT RELISH
Ingredients
* 1 eggplant, diced
* 1 onion, diced
* 2 cloves garlic, minced
* 1 jalapeno, diced
* 1 Tbsp olive oil
* 1/2 c tomato sauce
* 1 tsp salt
* 1 tsp white pepper
* 1 tsp marjoram
* 1 tsp basil
Directions
1. Saute eggplant, onion, garlic, and pepper in oil.
2. Add remaining ingredients. and heat.
3. Transfer to a heavy casserole and cook, reducing, for about an hour.
4. Drain excess liquid before refrigerating.
