Spaetzle. This simple dish can be eaten alone with butter or as part of a larger meal. Spaetzle is a small dumpling or noodle that is boiled in water and used as other pasta might be used. There are many spaetzle recipes on the internet, but they all seem to complicate this very simple dish which is really just a small fat noodle. We use a spaetzle machine to make spaetzle, but you can do it without a machine as well (my German wife prefers ';rolled'; spaetzel prepared without the machine).
Ingredients:
(note: these amounts are not precise--we don't even measure any more. Just eyeball the ingredients and mix--the texture and consistancy of the batter or dough is what is most important)
3 cups flour
1 egg
salt to taste
2 tablespoons oil
water
Boil a large pot of water. While the water is boiling, combine flour, egg, salt, oil and water. Add water until a thick batter is formed (a little thicker than pancake batter). When water boils, pour a portion of the batter into the spaetzle machine. Do not add too much spaetzle. The spaetzle should be able to remain separate in the boiling water. You will probably need to make two or three batches from your batter.
When the spaetzle floats, use a slotted spoon or other device to scoope the spaetzle out of the water (leaving the water behind). It may be useful to move the spaetzle to a strainer. Keep the water and use for all of your spaetzle (you may need to add more water to your pot depending on how many batches you make).
When your spaetzle is finished and drained, toss it in a hot frying pan with butter, salt and pepper. You can eat it as is, or you can serve it as a side dish.
Note on Spaetzle Machine: we found our spaetzle machine at a department store for just a few dollars. You will need to go to a store with a large kitchen gadget section to find one. The spaetzle machine we own is a simple device. I have seen some hand crank models that seem overly complicated. Our spaetzle machine is simply a small tub that slides over a metal sheet with holes in it. The batter is squeezed through the holes as the tub moves back and forth and falls into the pot of boiling water.
If you do not have a spaetzle machine, just change the amount of water and create a firm dough instead of a batter. Roll the dough out on a cutting board and use a sharp floured knife to cut small strips of dough. When you have cut enough dough, slide it off of the cutting board and into the water. When it floats, it is done. My wife prefers this type of spaetzle. It is more work, but the result is a slightly firmer noodle.

Once browned, stir in a can of condensed tomato soup. Stir to loosen browned bits off the bottom of the pan. Add two tbls. water. Bring to a simmer, lower temp. and cover. Cook for ten more minutes, until chicken cooked through.
Remove cover, turn off heat. Place sliced mozzarella on each piece. Replace cover and let cheese melt. Sprinkle with finely chopped green pepper, and you are done!
Really easy and tastes absolutely fabulous! Had it for dinner last night, but substituted cheddar cheese, which melts a lot faster so the dish got kinda gooey. But it was still delish! Hope you enjoy this recipe!
